Deese is going into its second vintage and holds a special place at Chateau d’Esclans as a red wine which is beginning to gain traction amongst consumers in France and select global markets.

Soil
Grapes are selected from vines which grow from chalky-clay slopes that have south-east exposure.

Grape Varieties
Grenache and Syrah.

Harvest
Harvesting by hand in small 10 kg crates, only in the morning. Grapes are sorted three times after a first selection in the vineyard: cluster by cluster manually on a sorter/ blower after destemming and finally grape by grape manually on a vibrating table. Soft crushing.

Vinification
Maceration in thermo controlled conical truncated vats for 3 to 4 weeks. Slow fermentation - maceration at 26 degrees Celsius to 28 degrees Celsius. Six month vinification in brand new French oak barrels.
