Grape Varieties
85% Grenache (39% from 80 year old vines)
and 15% Rolle.
Vinification
Harvesting at sunrise to noon by hand only
in small crates to avoid oxidation. Grapes are then sorted
electronically and manually 3 times. Destemming and slight
crushing at 7-8°C to avoid coloration. 90% free run juice.
10% first mild pressing. No maceration. Both free run juice
& pressed juice are partly vinified in demi muids (20%/600
liter barrels). Temperature controlled.
