Garrus

Heralded as the greatest Rose in the world, Garrus’ limited quantity (6 barrels per vintage) makes it a highly select wine. Noted for its creaminess and lush minerally finish, this wine is uncommonly elegant and has achieved cult status among the wealthy elite of the French Riviera.

80 year old vines. South/ southeast exposure.

Terroir

Chalky-clay slopes.

Grape Varieties

70 % Grenache (100% 80 year old vines) and 30% Rolle (100% 80 year old vines).

Vinification

Harvesting at sunrise to noon by hand only in small crates to avoid oxidation. Grapes are then sorted electronically and manually 3 times. Destemming and slight crushing at 7-8°C to avoid coloration. 90% free run juice. 10% first mild pressing. No maceration. Alcoholic fermentation in new and second year demi muids (600 liter barrels) for 10 months in Burgundian style. “Battonage” twice weekly. Individual barrel temperature control.
