Les Clans

Les Clans is the first of the higher end cuvees and marks a major departure in the flight as well as the way Rose typically tastes. This uniquely delicious wine which captured a 91 rating from the Wine Spectator drinks like a high end Burgundian white wine with a buttery and minerally finish.

Vineyards

50 to 80 year old vines. South/ southeast exposure.

Terroir

Chalky clay slopes.

Grape Varieties

75% Grenache (48% of 80 year old vines) and 25% Rolle.

Vinification

Harvesting at sunrise to noon by hand only in small crates to avoid oxidation. Grapes are sorted 3 times electronically and manually. Destemming and slight crushing at 7-8°C to avoid coloration. 90% free run juice. 10% first mild pressing. No maceration. Alcoholic fermentation in new and second year demi muids (600 liter barrels) for 10 months in Burgundian style. “Batonnage” twice weekly. Individual barrel temperature control.
